The folks at Xamán have made their own take on the traditional pechuga style of mezcal here, where ingredients are added to the still during distillation. Unlike some expressions, this one is not made with chicken, or any other meat products – instead, a unique citrus-based, and fully vegan recipe is added, imparting some splendid zest to balance the sweet, smoky, vegetal espadín agave notes at its core.
