This fascinating mezcal is brought to us by Mezcal Amarás, produced from the Americana agave, known for its saw-like thorns and unique mineral character. Under the watch of maestra mezcalera Diana Orozco Cruz, the agave ages between 10 and 12 years before harvesting. It's then cooked in a conical stone and wood oven with oak and pine, milled using a stone tahona wheel, and fermented in pine vats before double copper pot distillation.
