A marvellous mezcal from Derrumbes, this expression was produced in the Mexican state of Durango. The wild agave variety, Durangensis is traditionally processed by maestro mezcalero Uriel Simental, who first roasts it in a stone earth oven before it is ground by a stone wheel, naturally fermented, and copper pot distilled in small batches. An exciting offering indeed, ought to be an interesting one for fans of unusual agave expressions.
Fruity with soft berries and sweet citrus zest. Quite herbal, with vegetal agave and green apple opening the way for earthen, chewy spice, a whiff of meaty smoke, and peppery petrichor.
