The autumnal tipple is made with quinces from the Tiptree farm in Essex, and the end result is a satisfyingly sweet and tart liqueur. Step it up a notch and splash into a glass of Prosecco, and voilà! You have a quince Gin Royale. Or even just sip alongside a lovely cheese board, in place of a quince jam.
