St. Aubin in Mauritius uses a base of its sugar cane juice rum to make this intriguing liqueur, flavoured with sweet, tangy tamarind and fiery chilli. A great choice for adventurous mixology, or top with ginger beer and ice with a few wedges of fresh lime for a vibrant, zingy serve.
