York Gin Old Tom 70cl

York Gin's Old Tom is the tasty result of a collaboration with the Yorkshire Michelin-starred restaurant Star Inn, Harome. The slightly sweeter flavour comes from a Yorkshire sugar syrup exclusively developed for this gin, it's main ingredient white alba rose, native to Yorkshire hedgerows and famous for being the rose on the Yorkshire flag. Other ingredients include bronze fennel, star anise, angelica and pink peppercorns.

It looks like York Gin was almost destined to create an Old Tom expression, what with the cat on the label, and the history of tom cat-shaped plaques outside London gin houses, where you'd put a coin in the cat's mouth and a shot of gin would appear out of the cat's paw.
