The selection of gins from Wales has grown significantly in recent years, and the quality of Welsh gin remains very high indeed. Hibernation Gin, for example, is a terrific tipple with a heart of fantastic foraged ingredients including bilberries, crab apples and blackberries. interestingly, after distillation, the gin spends time ageing in white Port casks from legendary Port house, Niepoort.

Gloriously bright and fruit-forward, with fresh white grapes and green apple, tempered by oily juniper and Alpine herbs. Slowly develops a subtly oak-y warmth on the mid-palate.
