Four Pillars Sherry Cask Bottling Note

Four Pillars Sherry Cask Gin is an intense, rich new edition which was distilled in Healesville before being barrel-aged in 42 sherry and Australian fortified wine (Apera, created by friends of the Four Pillars) barrels which contained expressions between 15-35 years old.

Four Pillars arranged these barrels into a solera system, where the aged gin is then bottled from the bottom row of barrels after a year before a small amount of Spanish Amontillado sherry is added to the top for extra depth of flavour.

All of that sounds amazing, so you might want to hurry if you want to get your hands on some...
