    Four Pillars Rare Dry Gin

    Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop.

    Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.

    Nose

    The juniper is light and sweet, supported by touches of chopped mint, fresh citrus and floral hints.

    Palate

    It opens with candied peels and angelica, with warm cinnamon and white pepper building to a spicy mid palate. Subtle fruity notes throughout.

    Finish

    Suitably drying on the finish, with lasting notes of liquorice and lemon zest.

    Awful

    Very expensive, not the gin flavour I'm used to... Awful, don't know where you get the idea it's a good drink!

    Excellent Gin!

    Excellent gin! Really enjoyed my bottle. I had been recommended this by a friend who writes for a well known gin reviewer, so I knew to expect good things but not this good. The distillers get this spot on, it’s truly cemented as one of my favourites!

    Best G&T I've ever had.

    I drink a lot of gins. I try them in various ways: straight up at first. Then with tonics, and I prefer Jack Rudy Tonic Syrup but if it's unavailable I will use Fentiman's or Fever Tree. I will never review something or make judgement until I've tried a variety. I add a squirt of lime, or lime cordial. Sometimes Crème de violette. All depends on the flavour profile I get. This gin, compared and tasted next to another great one (Panarea Island) is absolutely outstanding. With some Jack Rudy Tonic Syrup and Gerolsteiner Sparkling Water and a tiny hint of Rose's Lime Cordial... the BEST G&T I've ever had. Bar none. Hands down. Winner. I have to experiment more. Straight. Maybe with Violette. All that. I tasted it pure and it was good, but it just explodes with the right tonic and so far, that's definitely Jack Rudy. WOW. #1 for me right now.

    A beautifully spiced gin, very smooth. Makes an excellent g&t with Feve-Tree tonic and a slice of lemon
