Thalassitis means 'from the sea' in Greek. It's an apt name for wine as it comes from grapes grown on the island of Santorini, and the variety in question assyrtiko produces intensely-flavoured dry wines that really taste of the sea, like salted lemons. As you might guess, there's no better wine with seafood. This is delicious now, but it will improve, mellow and develop nutty notes if kept for a few years.
