
We love a bit of Wire Works whisky and given that it's a tricky customer, we were intrigued to see a virgin oak finish release. But White Peak distillery has done a good job creating a very fine example of how to do it right here, taking a vatting of lightly peated single malt whisky initially matured in first-fill bourbon barrels and STR casks before it was finished for several months at a lower ABV in virgin American oak barrels with a range of toast and char levels.
Brown sugar, red apples, cinder toffee, and a little cinnamon as well as some leather.
Vanilla fudge, banana foam sweeties, dried fruit, and some chocolate emerge first followed by hints of marmalade, dates, lime zest, and a nutty element.
Sweet and slightly drying.
