Wire Works Heritage Chevallier marks two firsts for White Peak Distillery. It is the distillery’s first unpeated single malt and its first whisky made with heritage Chevallier barley, a variety that dominated English fields from the 1820s through to the 1920s before modern yield chasing pushed it aside. Here, the team has let the grain do the talking, maturing the spirit in less active first-fill bourbon barrels to spotlight Chevallier’s muscular malt character rather than smother it in oak. The result is a rare contemporary take on a barley once synonymous with English brewing and distilling.
Baked vanilla cheesecake and rhubarb and custard sweets lead, backed by fruit salad chews, strawberry laces, and a nostalgic flick of wood glue. Watermelon freshness and warm apple pie crust round things out.
Solera ice cream, white chocolate and malted milk biscuits meet cassia bark, vanilla extract, and a prickle of Kashmiri chilli heat. Tamarind tang, rose petal lift, fresh hay, and oolong tea bring depth and a slightly savoury edge.
Gently herbal and grassy, with delicate liquorice, baking spices, and a dusting of icing sugar lingering over fresh-cut grass and sweet malt.
