Single Malt

A rare early White Peak English single malt, drawn from a first-fill bourbon cask number 2018–16 — only the sixteenth cask ever filled at the distillery. Bottled at 57.1% without filtration or added colour by Thompson Bros., this young single malt shows exactly why the brewery-influenced fermentation regime has turned heads.
Green pepper, lime zest, mezcal brightness and coastal smoke, with grapefruit peel, lemon curd, smoked almonds and peanut brittle appearing with water.
Salty, mineral peat with iodine and hessian, shifting to citrus, smoked ham, cockles and seashells.
Dry and coastal with grist, hessian, lemon zest and light ginger spice.
