The Cask Strength Collection from Signatory is renowned for its many wonderful independent bottlings, and this Tormore 28 Year Old should prove to be no exception. It was distilled in 1988 and matured in two hogshead casks (15585 & 15590) until it was bottled at a cask-strength 49.7% ABV in July 2017, with an outturn of just 388 bottles available.
Toasted marshmallow, diced almonds and plenty of vanilla initially, alongside floral malt, a grassy element and a flicker of ginger spice.
Dried barley, peppery oak and honey lead, before hot cinnamon, rich molasses and sultanas emerge.
Dried peels and a touch of spicy clove linger.
