Tobermory
Tobermory Distillery created this 26-year-old single malt, the penultimate expression in its limited edition Hebridean Series. The brand took a parcel of its former signature 15 Year Old whisky and allowed to it age longer, letting it develop year on year. This particular batch had more than ten years of additional ageing. It was bottled, as every Tobermory is, with its natural colour and non chill filtered. The inspiration for the 26 Years Old comes from the white-tailed eagles which nest in Mull, which features on the bottle in another photo by wildlife cameraman Gordon Buchanan.
Oak char, toasted brown sugar, dates, mandarin, strawberry laces, apricot yoghurt, cinnamon pastries. Throughout there's the dark and black fruits that shine in older sherried Tobermory.
The whisky opens with wintery spice, blackcurrant jam, fig rolls, and orange zest. It's simultaneously big and rich with flavour and boats a tongue-coating texture, but is also elegant and refined with its fruitiness, which is really what Tobermory does best.
Long and composed with black pepper, red chilli warmth, Hessian, and bramble berries.
