The Auld & the Bold shines a spotlight on distillers challenging whisky conventions, and Thy Distillery’s grain-first philosophy makes it one of the most distinctive producers in modern European whisky. Grown, malted, mashed, and distilled entirely on the family farm, this Danish single malt combines organic farming with deeply characterful spirit.
Distilled from peated Odyssey barley and matured initially in bourbon wood before an oloroso finish, this whisky aged for nine years before bottling at 54.5% ABV from cask #67. A total of 222 bottles were produced.

Nose
Dried apricot, orange peel, chocolate, fruit salad sweets, and gentle smoke.
Palate
Roasted herbs, savoury meat, vanilla caramel, and aromatic peat.
Finish
Soft caramel, toasted oak, and lingering smoke.
