
The sixth addition to the Wheel of the Years Series from Ireland's Dingle distillery honours the ancient celebration of the spring equinox, Cónocht an Earraigh. This time of year, when night and day align and pastures begin to flourish is an ideal time for the Dingle master distiller to assess its casks and sample the whisky as it matures. This edition of the triple distilled Irish whiskey initially matured in bourbon casks before it was treated to a finish in Cabernet Sauvignon wine casks.
Hedgerow berries and juicy dark plums, burnt brown sugar and toasted marzipan.
Dark treacle toffee and jammy red fruit pastries, softly sweet baking spice, charred oak, and gingerbread.
A sweet finish with rich vinous fruit and leathery oak.
