Secretive single grain from Signatory. This is another chapter of their Single Grain Selection, taken from an undisclosed grain distillery. This was placed in casks in August 1998 and bottled 18 years later in January 2017.
Soft vanilla, bubblegum, subtle spiciness of rye.
White chocolate Lion bars (these are rare, but excellent - search them out), a touch of lemon zest.
Oodles of caramel and black pepper on the finish.
A milky pudding of a grain whisky, think rice pudding with lemon curd or vanilla and white chocolate panna cotta, some pleasing peppery yet fresh spice and salted popcorn and even love heart sweet notes. I first tried this when it was bottled at 16 years old,as my introduction to single grain whisky. It opened up a new world whisky for me,and I have tried a number of single grain since. This is as good as I remember it. I would put the finish as mild chilli pepper,but who am I to argue with the chaps at MoM.
