The Isle of Raasay distillery is in the process of producing its own whisky, though it still needs time to mature. So, it began the aptly-named While We Wait series, to enjoy while we wait for the release! Here we have the fourth bottling, the 2018 edition, a lightly peated single malt from an undisclosed distillery. This release was finished in French oak Tuscan wine casks from three vineyards that produce Cabernet Sauvignon and Cabernet Franc.
Nose: Gentle and approachable smoke, followed by a plethora of fruity aromas. You have red berries, clementine citrus, honeydew melon and finally freshly cut grass.
Palate: The peat smoke brings a dryness to the palate where the red wine notes really begin to come through alongside more of that orange citrus.
Finish: Oily oak and a creamy note on the finish.
