The second batch of Israeli single malt whisky from the Pelter Distillery enjoyed five years of maturation. The first four of those years was spent in first-fill Jim Beam bourbon barrels, after which the which was split into two parcels to mature in different casks – one was aged in Cognac casks from Otard, while the other was aged in Pelter's own brandy casks. The whisky was married back together and bottled up at 51.3% ABV.
Nose Pecan, lemon drizzle cake, melted butter, slightly floral.
Palate Malty, with a layer of honey and some warm oak.
Finish Slightly chocolatey on the finish, plus tobacco hints.
