Old Perth Solera System celebrates the sherry-making tradition with a beautiful new Scotch whisky. In the Solera system, barrels are stacked in layers called criaderas. The oldest layer, the solera, holds the most mature wine ready for bottling. As wine is taken for bottling, it’s replenished from the next oldest layer, which is then refilled with younger wine, ensuring a continuous blending of ages.
Old Perth has demonstrated its appreciation of this process by using five 70-year-old traditional sherry butts to create this whisky. Housed in Warehouse #1 at Aberargie in Perth, this was the first whisky to be aged in these casks, which the brand says gives them "forgotten flavours preserved over time" and also reveals that, internally, it refers to the liquid from these 70-year-old butts as the special 'Soy Sauce' used in the Original, Double Sherry Wood and Cask Strength recipes.
