Mackillop's
Scotland
Single Malt
An independently bottled Mortlach single malt Scotch whisky, distilled in August 1991 and left to mature in a single Sherry cask. It was left to mature for 23 years before being bottled for Mackillop's Choice in January 2015 with an outturn of 610 bottles. Those of you who know Mortlach as a bit of a Sherry monster from that classic Flora & Fauna release ought to pay attention to this one...
Complex but Perfectly balanced.
Buttery, flaky cinnamon twist pastry fresh from the bakery, brown sugar and molasses, caramel with chocolate swirls; occasional asparagus cooked in balsamic vinegar peeks through, and a finish that crescendos at a rapid rate and lingers with pears and baked apples.
Definitely needs water at 56.6% abv. Initially there was more sherry on the nose, but after a day or two it became more about the spirit. Citrus and Spiced Apples on the nose, with some hints of caramel in the back. Definitely a floral/herbal spirit quality on the nose. On the palate, again, spiced apples with hints of barley & caramel. I found the spirit too dominating for a 23yo.
