Those Signatory folks are at it again, independently bottling up tasting Mortlach single malt for us all to enjoy! This time they got their mitts on an 11 year old expression from the Beast of Dufftown, which was aged in a pair of bourbon barrels from March 2008 to March 2020 - just a few days before its 12th birthday! Bottled for the Cask Strength Collection (at cask strength, obviously), this one had an outturn of just 294 bottles.
Hazelnut, almost floral malt, leading to dried spices and ginger wine.
Buttery up front, followed by a classic meaty, peppery core of barley and oak.
Honey and red chilli flakes.
