The Italian owners of Matthew Whiskey selected this peated Irish single malt to celebrate contemporary Italian chef Jacopo Ticchi. Offering up notes of vegetal, earthy smoke, with mineral notes and spice in tow, it compliments Ticchi's rustic cooking style and would probably follow rather nicely after some sustainably sourced grilled fish.
