This Glenrothes single malt was bottled by Darkness, having finished its 14-year maturation in one of the indie bottler's teeny custom-made oloroso sherry octave casks. The smaller surface area inside the cask means increased interaction between the spirit and the wood, in this case resulting in generous notes of sweet pastries and baked goods thanks to the oloroso influence.
A sweet, welcoming array of baked goods, think Tarte Tatin, fruit crumble, madeleines and sugar-dusted pastries.
Buttery layers of flaky pastry and shortbread, with poached apples, jammy fruits, and a dusting of sweet spice.
The pastry notes linger, with soft fruits, butter biscuits and mellow oak.
