We proudly present The GlenAllachie 35-year-old, a beautiful single malt Scotch whisky that dates back to 1989 and has spent the last three-and-a-half decades maturing in three Pedro Ximénez, one oloroso, and two virgin oak casks.
“Unifying these six spectacular casks has created the perfect equilibrium between the sweet influence of Pedro Ximénez, the nutty contribution of Oloroso, and the spiciness of the virgin oak.” – Billy Walker, GlenAllachie master distiller
The whisky aged in the three Pedro Ximénez hogsheads (#5896, #5897, and #5898) was distilled on 7 June 1989 and contributed flavours of poached plum, muscovado sugar and heather honey. The whisky aged in the two virgin oak casks (barrels #2152 and #2153) was distilled on 3 July 1989 and it added more heather honey and elements of cloves, treacle, nutmeg and pomegranate. The whisky aged in the oloroso puncheon (cask #5587) was distilled on 7 July 1989 and brought notes of cinnamon, dried red berries, dark chocolate and nutmeg.
The GlenAllachie 35 Year Old was bottled at a high strength of 48% ABV, natural colour and unchill filtered, to let the spirit greater speak for itself. Along with the fancy wooden presentation box and distinctive squat decanter, this whisky comes with a booklet with Walker’s handwritten notes, providing his insights into the cask selection and story behind the 35-year-old. The cover is an FSC-certified paper made of spent malt.
