Since becoming master distiller at GlenAllachie, Billy Walker has embarked on an in-depth cask evaluation programme, and with 50,000 casks on site, there are some real gems to be found! This particular single malt was distilled in 2008 and matured for 14 years in a single chinquapin oak barrel from the Northern Ozark region of Missouri. Bottled up at cask strength, without added colour or chill filtration, a release of 259 bottles.
Bursting with toasted oats, liquorice, and heather honey with hints of cardamom, black truffle, and ginger snaps.
Lashings of spiced heather honey, aniseed, and strawberry jam, followed by notes of walnut and pecan, with ginger and cinnamon on the finish.
