The warehouses at GlenAllachie are a real cave of wonders, with 50,000 casks of whisky patiently maturing. Under the expert leadership of master distiller Billy Walker and his cask management programme, some splendid single cask expressions have been uncovered. This single malt, distilled in 2010, spent a dozen years resting in an oloroso sherry puncheon, yielding a total of 719 cask-strength bottles, without added colour or chill filtration.
