Dailuaine 5 Year Old Pedro Ximénez Cask Finish (Darkness)
Five year old single malt from the wonderful Dailuaine Distillery, which has been bottled up as part of the Darkness range, which is all about well-sherried deliciousness. This particular expression has been finished in a Pedro Ximénez octave cask, which is smaller than your run-of-the-mill cask, allowing for more interaction between the wood and the whisky. Boasting big notes of ripe red fruit, balanced by smoky notes, this one has plenty of full-on flavour, along with a deep ruby hue.

Nose
Red apple, toast with strawberry jam, cask char.
Palate
Clove, vanilla, plum, a dense waft of smoke rolling in.
Finish
Soot, brown sugar, more plum sweetness.
