Dailuaine 17 Year Old Pedro Ximénez Cask Finish (Darkness)
Here we have a well-sherried Dailuaine single malt, independently bottled as part of the Darkness range after a finishing period in a Pedro Ximénez sherry octave cask. These casks are very small indeed (and specially-coopered for Darkness), leading to a greater surface area to volume ratio, which means more interaction between the wood and the whisky. The result is a single malt packing powerful sherry richness.

Nose
Dates, walnuts and a touch of BBQ-charred tropical fruit.
Palate
Milky coffee, peppery barley, more mango and pineapple, plus sultanas and raisins thrown into the mix.
Finish
Waxy peels, peppercorn and more enjoyable coffee bitterness.
