    An Irish single malt with a slightly unusual passport. Distilled in Ireland in 2002, this whisky spent its full 15-year maturation in Scotland before being bottled as part of the Cut Your Wolf Loose series. That cross-border ageing isn’t typical for Irish whiskey, and it nearly caused regulatory headaches, but the cask was ultimately allowed to continue.

    Nose

    Big apples, pear tarte tatin, honeycomb, and malt biscuits, with a soft waxy note.

    Palate

    Thick malt and floral honey, with baked apples, poached pears, and a gentle richness.

    Finish

    Lightly peppery, with honeyed malt and a touch of lemon zest.
