Indie Caol Ila from James Eadie, distilled in 2011 and rested in a trio of casks (made up of re-charred and refill hogsheads) for nine years. It was bottled for the Small Batch series, with an outturn of 1,128 bottles. This one was bottled exclusively for the UK, which is initially why we thought there was a red lion creeping across the label – in fact, the bottle boasts a red lion because James Eadie himself used to own a pub called 'The Red Lion', and this is an homage to that pub.
Smouldering heather, baked earth, pain au chocolat, a sea breeze.
Savoury briney notes, smoked meats, lemon thyme, and peppery oak.
Spiced milk chocolate, barbecued pineapple, and salt and pepper.
