Sherry
A well-sherried Caol Ila from Adelphi here, distilled in 2008. It spent its 12 years of ageing in a single first-fill sherry hogshead, until it was bottled at cask strength. A release of 272 bottles at 53.9% ABV, full of smoked meats and sherried fruitiness.
Smoked meats and savoury coastal influence balanced by toffee apple, spiced chocolate, and dried fruit.
Rich mocha and golden syrup, leading into maritime peat smoke, plum skin, and more savoury meatiness.
Wood smoke, orange marmalade, and burnt vanilla pod.
