
A limited-edition Irish single malt, the 2010 Cognac Cask from Bushmills was initially matured in a combo of oloroso sherry butts and bourbon barrels. After seven years, it was transferred to Limousin oak Cognac casks for a further five years of finishing. This generous length of time added deep layers of flavour to this robust, non-chill-filtered release, which was bottled at cask strength.
A gentle waft of seasoned oak meets ripe orchard fruit, with cinnamon, sultanas, and honeycomb sweetness wrapped in dried fig and almond warmth.
A rich hit of caramel and juicy ripe pear opens the show, leading into layers of dried dates, sultanas, and figs. The cognac cask influence brings almond, warm vanilla, and a touch of leather, all lifted by cinnamon and complex spice.
Delicate wood, ripe pear, and sweet spice linger in a comforting, luxurious fade.
