Nose: Cinder toffee, Jamaican ginger cake, cinnamon and a touch of polished hardwoods. Floral honey, green apple and stone fruit underneath.
Palate: Oranges, dried fruit and a little overripe peach make things juicy at first. A spicy, peppery quality moves into the mid-palate with some herbaceous undertones, before oysters, cured meat, a little iodine and some ashy smoke rounds things off.
Finish: More smoke emerges among cold black tea, black olives and stem ginger.
