This single cask Aultmore was released as part of the wonderful Infrequent Flyers series from Alistair Walker! Having spent its decade of ageing in a refill bourbon barrel, the Speysider was eventually bottled up at 58.5% ABV in a release of 240 bottles, full of all that honey and vanilla cask influence, and a good hit of spice.
Honeycomb leads into banana and custard, with notes of nougat and sweet citrus.
More caramelised nuts and sultana sweetness is balanced by a hit of peppery spice.
A burst of tart fruit lingers on finish of baking spices.
