The English Distillery

The fine folks at The English Distillery have done a rather wonderful thing here. Instead of purchasing empty ex-Pedro Ximenez sherry casks to mature their wonderful whiskies in, they decided to buy a few full ones! The sherry was blended with some of the distillery's single malt and left to rest further in the cask before bottling. The result is a superb sipper with rich, dessert wine characteristics.
Rich malted barley and vanilla waft through hefty sherried prunes and raisins, with plenty of rounded, sweet oak.

Very interesting. The grape and the barley stick to their own lane...Starts all grape skin, towards Brandy, then the confirmation of sweet PX, coffee, burnt brown sugar, sugar cane sweetness, and finishes with a barley/malt send-off. Very smooth. Super smooth.
