That Boutique-y gang has been on a US road trip, collecting a hoard of delicious spirits along the way. This is a straight bourbon from the Texas-based Ironroot Republic, distilled from a mash of 100% Bloody Butcher corn, presumably named so due to its intense red hue. Due to being aged in new charred oak barrels, it meets the requirements for a bourbon, as opposed to a corn whiskey, despite that immense mash bill. It's rare to come across a single cask of this, with the majority of Bloody Butcher spirit used as a flavouring across the distillery's range, but you can always trust the Boutique-y folks to get their hands on something unusual.
Batch 1 is a release of 242 bottles.
Nose: Heaps of buttery barbecued corn, caramelised brown sugar, and woody spice, with herbaceous, sappy undertones.
Palate: Mouthcoating layers of oily oak and toasted nuts, with chocolate fondant and stewed red fruits joined by rich dark caramel and flashes of nutmeg.
Finish: Cedar and pepper join for the finish, with a touch of woody anise and sweeter baking spices.
