The Helena Blend from Denmark's Empirical Spirits is a good place to start if you're wondering what they're all about. Showing off the koji at the core of their spirits, made with barley from biodynamic farms around Copenhagen on which they grow Aspergillus Oryzae. It's then fermented with Belgian saison yeast and vacuum distilled, creating a clear spirit.
