Part of El Destilado's range of agave spirits, Pechuga de Ameyaltepec was crafted by Delfino Tobon in San Pablo Ameyaltepec, made from the rare and wild Papalote agave. This expression really does have a rather unique creation process. The distiller uses dry ingredients that make up the traditional dish mole, hanging them in the condensing chamber of the peculiar 3-plate copper-stainless steel still while distilling the agave.
