Another agave spirit from the El Destilado range, made by a small producer in Santa María Ixcatlán, Oaxaca, using papalome agave. This particular variety is a bit like tobala, but while tobala may be one of the psychically smaller types of agave, papalome are much larger.
Banana bread, green olive brine, wet grass and a hint of smoked meat.
