A fabulous rum from Mauritius, flavoured with vanilla and spices including nutmeg. It was named for the Pink Pigeon, a bird that is native to the island and recently climbed from critically endangered to just endangered. (You know times are bad when being "endangered" is a step up.)
Nose: Spiced, sweet and thick with molasses, cassia and hints of clove.
Palate: Custard to the fore, with a little toffee brittle, guava and cardamom. Hints of nutmeg and cedar.
Finish: Toasty, charred oak on the finish. Very sweet.
