Single estate Mauritian white rum, made from sugar cane juice rather than molasses. Although unaged, it is regularly stirred in stainless steel vats for at least six months prior to bottling, a process that the Rhumerie de Chamarel say helps remove some of the unwanted, volatile compounds.
