A dry, spicy expression from Don Papa in the Philippines, aged entirely in casks which previously held American rye whiskey! The rum spent four years in said casks before being bottled at 45% ABV. Perhaps this could be a great start to putting a rum-based twist on a Manhattan...
Sandalwood, apricot, and black pepper warmth, leading into leafy mint and a dry finish with a dusting of cocoa.
