Matured in an eclectic mix of casks, this rum from Philippines-based Don Papa started its journey in bourbon casks, maturing for three years, before moving to rioja barrels for six months, and then Islay whisky casks for a final three months. Gayuma is a softly smoky rum, with a medley of fruits and spices. An excellent sipper, and it will certainly stand out in a rum-based Old Fashioned.
