Another impressive addition to the Saison Rum collection from French spirit experts Jérôme and Lilian Tessendier. To begin, a meticulous blend of molasses-based pot still, and sugarcane-based column still rum from Barbados was filled into American white oak casks, where it remained to mature on the island for the next three years. Next up, the rum was shipped to France where Jérôme Tessendier got to work applying the skills learned in Cognac production, and blending the different batches to create a perfect balance. After a final rest in French oak barrels, the unsweetened rum was bottled up at five years old, at a rewarding 46% ABV.
