Clairin Sajous 2023
Produced at Distillerie Chelo, Clairin Sajous is an intriguing style of Haitian sugar cane juice rum. Sugar cane is pressed and then reduced to juice over fires fuelled by the leftover cane remains. It's then fermented using wild yeasts and double-distilled before being bottled at full strength.
Tasting Note by The Chaps at Master of Malt
Nose
Wet grass, iced buns, ripe mango and a hint of peppercorn.
Palate
Bitter herbs balanced by milk chocolate, with continued grassy notes.
Finish
Very slightly oaky. Brown sugar and nutmeg.
