From the Copeland folks in Ireland comes this aged rum! It blends together Barbados rum (aged in bourbon barrels) with rum distilled in Donaghadee, where the distillery is based, which was aged in a combination of French Pinot Noir and quarter bourbon casks. Pretty cool stuff!
Spicy initially, with root ginger and black pepper leading into ripe pineapple and toasted coconut.

Great wee local rum I was able to get before the Chaps at Mo. Towers, very reminiscent of Vat19 in my opinion.
