Camazotz Oaxacan Rum
Locally known as "aguardiente de caña", Camazotz is a raw sugar cane rum produced in the eastern Highlands of Oaxaca, Mexico. Sugar cane is grown without pesticides, raw pressed by hand, then fermented in open barrels using ambient airborne yeasts before copper pot distillation. Bottled unaged, this is a vibrant, expressive spirit, with mild sweetness and vegetal, grassy depth.
