From Mezcal Los Javis comes an expression produced using the Jabalí variety of agave. Jabalí is a bit notorious for being somewhat difficult to work with, but maestro mezcalero Don Javier Mateo and his team have certainly done the job fantastically judging by this top-notch spirit.
